BLUE SPRUCE OLIVE CHICKEN MOZZARELLA

4 chicken breasts
1/4 c. flour
1/4 tsp. salt
1/4 c. olive oil
1 clove garlic, crushed
1 med. onion, diced
1 (8-oz.) can sliced mushrooms
1 (14-oz.) jar spaghetti sauce
1/2 tsp. oregano
1/2 c. sliced pimento-stuffed olives
1 (6-oz.) pkg. sliced mozzarella

Skin and bone chicken breasts, cut into bite size pieces. Combine flour and salt in a plastic bag and coat chicken. Heat oil in a skillet and brown chicken. Arrange chicken in shallow 2-quart baking dish leaving the drippings in the skillet. Sauté garlic and onion in drippings until onion is tender. Stir in mushrooms, spaghetti sauce, oregano, and olives; pour over chicken. Cut cheese slices into strips and place on top of chicken. Bake at 350 degrees until chicken is tender, about 30 minutes. Makes 6-8 servings.

BUNKHOUSE BEDTIME TREATS

1/2 c. margarine, melted
2 c. brown sugar
2 eggs
1 1/2 c. flour
2 tsp. baking powder
1 tsp. vanilla
1 c. butterscotch chips
1 c. white chocolate chips
1/2 c. coconut
1/2 c. nuts

Stir together margarine and brown sugar; add eggs and beat well. Stir in flour and baking powder. Add vanilla, butterscotch chips, white chocolate chips, coconuts, and nuts; blend well. Spread in a well greased 9x12" pan and bake at 350 degrees for 25 minutes. Do not overbake! Cut bars while warm. These one-bowl butterscotch brownies are quick and easy!

FERRIS MANSION STICKY BUNS

1/2 c. chopped pecans/walnuts
13-14 frozen unbaked rolls
1 (3-oz.) box cook-n-serve butterscotch pudding
2/3 c. brown sugar
3/4 tsp. cinnamon
1 stick margarine, melted
1 tsp. half and half

Spray a large Bundt pan with non-stick cooking spray. Sprinkle nuts in the bottom and arrange rolls on the nuts; sprinkle with pudding, brown sugar, and cinnamon. Pour melted butter and half and half on the top. Cover tightly with foil sprayed with non-stick spray and allow to set overnight in a warm (but not hot) place. (We make several pans and keep in the freezer until the night before needed.) Remove foil, and bake at 350 degrees for 35 minutes. Remove from the oven and allow to set for 5 minutes, then flip onto a serving plate.

ZGANCI (SLOVENIAN PANCAKE CRUMBLES)

2 eggs
1 1/2 tsp. baking powder
2 T. sugar
1 c. milk
1 1/4 c. flour
1/4 tsp. salt
2 T. butter

Beat eggs till foamy and thick. Add baking powder, sugar, milk, flour, and salt. Blend until moistened. Melt butter in a heavy skillet over medium heat and pour in mixture. Allow to cook until crust forms on the bottom. Cut in half, flip over and cook other side. Chop into bits. Serve with warm maple syrup.
