Filled Date Cookies Kinkade

1 c. sugar
1 c. butter
1/2 c. milk
2 c. oatmeal
2 c. flour
1/2 tsp. salt
1/2 tsp. soda
1 pkg. pitted dates
 
Cream sugar and butter.  Blend in milk.  Mix in oatmeal, flour, salt, and soda.  Chill; roll thin and cut into circles. Bake at 350 degrees until light brown (about 10 minutes).  Cook dates with a little water until soft and smooth. Spread on cooled cookies and top with second cookie.

Makes about 2 dozen cookies.

Irene's Pumpkin Bread

1 c. corn oil
4 beaten eggs
2/3 c. water
2 c. fresh pumpkin puree
3 c. sugar
3 1/3 c. flour
2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 tsp. nutmeg
1 1/2 tsp. cinnamon
1/2 c. chopped nuts
1/2 c. golden raisins

Grease and flour three standard loaf pans.  Mix the oil, eggs, water, and pumpkin puree (canned pumpkin can be substituted if desired).  Add the sugar, flour, baking soda, salt, nutmeg, and cinnamon.  Stir until blended and add the raisins and nuts.  Pour into prepared pans and bake 1 hour at 350 degrees.  Will stay moist for days.

Makes 3 loaves.

Sausage Acorn Squash

4 4" acorn squash
1 T. margarine
1/2 c. red pepper, diced
1/2 c. green pepper, diced
1 lg. onion, chopped
1 lb. lean sausage
1 c. bread crumbs
1/2 c. vegetable stock
1/2 tsp. pepper
1/4 tsp. salt
2/3 c. maple syrup

Cut acorns in half lengthwise and clean.  Melt margarine in a small skillet and sauté' pepper and onion until translucent.  Combine sausage, bread crumbs, pepper, and salt in a bowl.  Add sautéed vegetables and enough stock to moisten.  Mound 1/3 c. of mixture in center of squash and brush with maple syrup.  Bake until done about 40 minutes, brushing with maple syrup every 10-15 minutes.

Makes 8 servings.
